Chicken enchiladas!

Ingredients

  • 1 can Cream of Chicken Soup
  • 1 (8 ounce) container sour cream
  • 1 cup Picante Sauce
  • 2 teaspoons chili powder
  • 2 cups chopped cooked chicken
  • 1 cup shredded Monterey Jack cheese
  • 10 Fajita Size Flour Tortillas, warmed
  • 1 medium tomato, chopped
  • 1 green onion, sliced

Directions

  1. Mix soup, sour cream, picante sauce and chili powder.
  2. Mix 1 cup picante sauce mixture, chicken and cheese.
  3. Spread about 1/4 cup chicken mixture down center of each tortilla. Roll up and place seam-side down in 3-quart shallow baking dish. Pour remaining picante sauce mixture over enchiladas. Cover.
  4. Bake at 350 degrees F for 40 minutes or until hot. Top with tomato and onion.

Greek festival and crab cakes!

We love love love the Greek festival!  It is so fun to watch their traditional dances and eat their amazing food!  We ran into Dusti and her sweet family as well :)











After a delicious lunch at the Greek festival, I must say Nic may have topped it with delicious crab cakes!  My weirdo husband doesn't like crab, so he got Mahi mahi :)

DIY play-doh and sweet potato fries!

Riley and I were a bit bored this afternoon while Ronnie was catching up on some homework, so while our sweet potato fries were in the oven, we decided to make some play-doh :)

You need:
  • one cup flour
  • one tablespoon alum powder
  • half cup salt
  • one tablespoon oil
  • half cup water
  • food coloring

Mix all ingredients in a bowl.







After smashing it all together, use just as you would store-bought play-dough :)


Making burgers :)


Works just as well with the play-doh toys as store bought!

While Riley played, I finished up dinner.  Simple burgers and sweet potato fries.  <3

Sweet Potato fries:
  • Wash and slice sweet potatoes
  • In a bowl, mix olive oil, sea salt, pepper, cumin, chili powder, and a pinch of cayenne pepper.  (Sorry no measurements!  Just sprinkle to your taste.)
  • Toss fries in the mixture and let sit 30 minutes
  • Bake at 425 for 30 minutes, flipping once.

Yum!
